Monday was a quiet day. Still very hot and quite humid too! The biggest excitement I had was taking the trash out to the curb for pick up this morning.

I guess that’s the joy of ‘ordinary’ days. I really do appreciate them.

TODAY IS…CHEESECAKE DAY

I have no idea who invented cheesecake! But, we've got a great recipe to celebrate Cheesecake Day. And it's chocolate - this means it's worth the extra effort. Surprise someone with a yummy dessert soon

CHOCOLATE CHEESECAKE

Crust

45 vanilla wafers (crushed)

6 tablespoons powered sugar

6 tablespoons unsweetened cocoa powder

6 tablespoons melted butter or margarine

Filling

3 8-oz pkgs of cream cheese

1 1/4 cups sugar

2 teaspoons vanilla

1/2 cup sour cream

1/3 cup unsweetened cocoa powder

1 tablespoon all-purpose flour

3 eggs

For the crust 1. Preheat over to 350 degrees F. 2. Mix together all crust ingredient in a medium bowl. 3. Press into the bottom and 1/2 inch up the sides of a 9 inch spring-form pan. 4. Bake 8 minutes and set aside to cool.

For the filling 1. Preheat over to 450 degrees F. 2. In a large bowl, beat the cream cheese until fluffy. Gradually add sugar and vanilla and beat until smooth. 3. Beat in sour cream, then the cocoa and flour. Add eggs last and just mix until blended. Pour batter into prepared crust. 4. Bake for 10 minutes. Lower oven temperature to 250 degrees F. Continue baking for 40 minutes or until set. 5. Remove from oven and set on a cooling rack. Loosen the cake from the sides of the pan with a knife and cool completely. Remove sides of the spring-form pan. Cover the cheesecake and refrigerate for 4-6 hours. Top with strawberries or whipped cream before serving. Keep left-overs covered and refrigerated.

1876 - Thomas A. Edison of Menlo Park, NJ patented the mimeograph machine. He described it as a method of preparing autographic stencils for printing. We don’t use mimeographs much these days, thanks to paper copiers and computer word processors. Mimeograph machines used to be cranked by hand and later models were electric. The mimeograph worked by first creating a spirit master which was placed on a large rotating drum. A strong smelling, purple ink would then print out on paper. We used to use these a lot in school back in the 1950s and 1960s. We remember the fumes, especially.

1899: A.T. Marshall of Brockton, MA patented the refrigerator on this day.

TODAY’S SMILE

A funny story tells about an old lady who was living in the village. She had never owned nor even been in a car before.

One day, she was returning home from the market carrying a big heavy basket on her head, when a rich man riding his car passed by. Kindly, he offered to drive the lady to her home.

She thanked him and got into the car with her basket. On the way, the man glanced at the lady in the mirror, still holding her basket over her head.

Astonished, he asked her to lay the basket down in the car and rest. The old lady naively replied, "Oh my son, your car is carrying me; this is enough, I should not burden it carrying my basket too!"

What an innocently funny response!

We sometimes do the same with God. Everyday, God carries us during the day. Still, we insist on carrying our heavy baskets of worries and fear of the future, for family, kids, spouses, money, jobs, etc...

We are carried by Almighty Hands, watched over by Sleepless Eyes and God plans our future. Let us then relax and lay down everything in God's Hands.

Theold lady, if she agreed to lay down the basket, would have to carry it again when she returned home. But the beautiful thing about God is that once we cast our heavy basket in His Hands we do not need to think about it anymore.

The apostle Paul wrote of a time when he was all alone, facing great opposition. But he said that the Lord stood at his side and gave him strength.

Too many times when we pray, we sit back and wait, without making any effort to solve the problem. It is when we completely trust God to guide us, and then step out in faith and act, that we get results.

Though we may make mistakes, we can trust God to strengthen us and eventually guide us through the crisis.
