HAPPY TUESDAY !

I got a phone call from my ‘Sunshine’ babes last night. They always light up my day.and I also got a few of pictures in my mailbox from them – what a double treat!

Tonight is my dulcimer night and I know that will be enjoyable- it always is. But with the days getting shorter, it’ll be dark when I come home and I don’t like that at all.

Just yesterday, it seems, we could sit out in the evening til 9:30 or so and it would still be daylight…not anymore!

TODAY IS…ANGEL FOOD CAKE DAY

An angel food cake is a simple sponge cake. This means it's made without egg yolks or any other source of fat. To keep it a fat-free dessert, serve unfrosted slices with fresh fruit. The secret to making this cake comes from my great aunt - drop the cake pan on the floor several times before putting it in the over. This will get all the air bubbles out of the batter

ANGEL FOOD CAKE

Cake

1 cup cake flour

 1 1/2 cups sugar

12 egg whites

1 1/2 teaspoons vanilla

1 1/2 teaspoons cream of tartar

1/2 teaspoon salt

Berry Icing

2 cups powdered sugar

1 dash salt

1/4 cup fresh berries (any kind), crushed

2 teaspons lemon juice

1. Preheat the oven to 375 degrees F (190 degrees C). Wash and dry your 10 inch tube pan to make sure there isn't any oil residue on the pan. 2. Sift together the flour, and 3/4 cup of sugar. Set aside. 3. In a large bowl, whip the egg whites, vanilla, cream of tartar and salt to medium stiff peaks. Slowly add the rest of the sugar while continuing to whip. When you have stiff peaks, fold in the sifted ingredients one third at a time. Don't overmix. Pour the batter into the ungreased tube pan. 4. Bake 40 - 45 minutes until the cake springs back when touched. Balance the tube pan upside while cooling. When cool, run a knife around the edge of the pan and invert onto a plate. 5.

Icing: Add the sugar and salt to your crushed fruit. Mix well. Add just enough lemon juice so the icing is thin enough to spread on the cake.

The Wisdom of Flying Geese

In the Spring, when you see geese heading North for the Summer or South in the Fall, flying along in "V" formation, you might be interested in knowing what scientists have discovered about why they fly that way. It has been learned that as each bird flaps its wings, it creates an uplift for the bird immediately following.

By flying in "V" formation, the whole flock adds at least 71% greater flying range than if each bird flew on its own.

Basic Truth #1- People who share a common direction and sense of community can get where they are going quicker and easier because they are traveling on the thrust of one another. Whenever a goose falls out of formation, it suddenly feels the drag and resistance of trying to go it alone and quickly gets back into formation to take advantage of the lifting power of the bird immediately in front.

 Basic Truth #2- If we have as much sense as a goose, we will stay in formation with those who are heading in the same direction as we are. When the lead goose gets tired, he rotates back in the wing and another goose flies point.

 Basic Truth #3- It pays to take turns doing hard jobs, withpeople or with flying geese. These geese honk from behind to encourage those up front to keep up their speed.

Basic Truth #4- We need to be careful what we say when we honk from behind.

Finally, when a goose gets sick, or is wounded by gunshot, and falls out, two geese fall out of formation and follow him down to help and protect him. They stay with him until he is either able to fly or until he is dead, and then they launch out on their own or with another formation until they catch up with their group.

 Final Truth- If we have the sense of a goose, we will stand by each other, protect one another and sometimes make new friends who seem to be going in our direction.
