HAPPY THURSDAY!!

 It is getting colder and we have more promises of s n o w by evening. They are calling this weather front a Panhandle Hook.

I am not wearing enough layers, guess it’s time for the winter silks. It seemed as though I couldn’t get warm today. I also need to find my wool socks. I put them away for the summer, now I can’t find them. They do keep my feet warmer.

This evening I hope to finish up some of the loose ends here and maybe bring down the tree from the attic.

TODAY IS...APPLE KRINGLE DAY

Eat this hot out of the oven or cold out of the fridge. Eat it plain or pile on the ice cream. There is nothing you can do to this that makes it anything except yummy good

4 cups apples

1 cup sugar

2 tablespoons flour

Topping

1/2 cup butter or margarine

 1/2 cup flour

1/3 brown sugar

1/2 oatmeal

1. Preheat oven to 350 degrees 2. Peal and slice the apples into a baking dish. Sprinkle 1 cup of sugar and 2 tablespoons of flour over the top of the apples. 3. Put the butter, flour, brown sugar and oatmeal for the topping in a mixing bowl. Blend well with the back of a fork. Spread evenly over the top of the apples. Bake 45 minutes to 1 hour - until the apples are bubbly and the top is brown

It was October and the Indians on a remote reservation asked their new Chief if the coming winter was going to be cold or mild. Since he was a Chief in a modern society he had never been taught the old secrets. When he looked at the sky he couldn't tell what the winter was going to be like. Nevertheless, to be on the safe side he told his tribe that the winter was indeed going to be cold and that the members of the village should collect firewood to be prepared.

But being a practical leader, after several days he got an idea. He went to the phone booth, called the National Weather Service and asked, Is the coming winter going to be cold? It looks like this winter is going to be quite cold,the meteorologist at the weather service responded. So the Chief went back to his people and told them to collect even more firewood in order to be prepared.

 A week later he called the National Weather Service again. Does it still look like it is going to be avery cold winter? Yes, the man at National Weather Service again replied, it's going to be a very cold winter.

The Chief again went back to his people and ordered them to collect every scrap of firewood they could find.

Two weeks later the Chief called the National Weather Service again. Are you absolutely sure that the winter is going to be very cold? Absolutely, the man replied. It's looking more and more like it is going to be one of the coldest winters ever. How can you be so sure? the Chief asked.

TODAY IS...SACHER TORTE DAY

Austrians take their baking seriously - and the definition of a true Sacher Torte had to be decided in court. In the early 1800's, the Congress of Vienna ruled that a Sacher Torte was made of two chocolate cake layers separated by apricot jam with a chocolate glaze on the top and sides. The most famous Sacher Tort is made (of course)at the Sacher Hotel in Vienna, but you can makes your's at home

4 egg whites

6 tbsp margarine or butter

3 squares (3oz) semisweet chocolate

4 slightly beaten egg yolks

1 tsp vanilla

1/3 cup sugar

1/2 cup all-purpose flour

1/3 cup apricot preserves

Chocolate Glaze

2 squares (2 oz) semisweet chocolate

2 tbsp butter

3/4 cup powdered sugar

4 tsp hot water

 In a large mixing bowl, bring egg whites to room temperature. Grease and flour a 9" round baking pan and preheat oven to 350 degrees F. Melt the butter and chocolate over low heat in a medium saucepan. Cool, then stir in egg yolks and vanilla. Set this pan of chocolate mixture aside. Beat the egg whites with an electric mixer untill soft peaks form. Gradually add sugar beating on high speed for about 4 minutes or untill it forms stiff peaks. Gently fold about 1 cup of egg whites into the saucepan of chocolate mixture. Then fold the chocolate mixture into the rest of the egg whites. Gently fold in the flour. Don't overfold. Spread the batter into the round baking pan. Bake for about 35 minutes or untill a toothpick inserted near center comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove cake from pan and cool completely.

TIP Divide the batter between two round cake pans and decrease the baking time so you don't have to cut one layer in half. These directions are for the original method. Cut cake horizontally into two even layers. Put one layer on a sheet of waxed paper. Spread the preserves over the top. Add the second cake layer. Spoon Sacher Torte Chocolate Glaze over cake so it runs down the sides. Carefully transfer cake to a serving plate.

Sacher Torte Chocolate Glaze: Melt 2 squares chocolate in a saucepan with 2 tbsp butter. Remove from heat. Stir in 3/4 cup powdered sugar and 4 tsp hot water till smooth. If needed, stir in more hot water so it is easy to drizzle.

TIP 2: True chocoholics might want to double this glaze recipe for full coverage of the cake.

Set the table with Christmas decorations, and a floral arrangement

Pray for the people who send you Christmas Cards as part of your family devotions. After the usual grace before dinner during December, open up any Christmas cards you received that day and offer a prayer for the person or family that sent it. If you kids aren't familiar with who sent the card, it's a perfect opportunity to tell a story about the person and how they fit into your life. This practice can help your children appreciate the larger family they belong to, give you more opportunities to share your own life with your children, and nurture relationships that can mean a lot to your children in future years. Besides, it's a chance to really look at those cards that people sent, to appreciate their beauty and the messages they extend. If you're lucky, you'll also receive at least a couple of Christmas Letters that everyone groans about, but I enjoy.

This is a good time to start a family prayer journal. Remember to put the date, request, and a column for the answer to prayer. Pray expectantly

After a windy and warm Monday, the cold is supposed to return today and we'll be back in the 30's. All this weather change is very hard to take.

 I had a very quiet day at work yesterday and today looks like one too ! Things will begin to slow down for us as the bad weather inhibits a lot of the work we do.

The work here at home is coming along. My crafting is now more than halfway done! By next weekend it should be complete then I can wrap the presents! I'm decorating little by little and things are beginning to look like Christmas around here. I also have started my cards, so that too will hopefully be done next weekend.

Tomorrow night is my prayer group meeting and other than that I won't have to go out any evenings this week.

That is a good thing.

It's not just Thanksgiving

Think of it as... TURKEY LEFTOVER SEASON

Cooks struggling with the question of what to do with all of that turkey, deserve their own special day!

TURKEY ENCHILADES

3 cups chopped turkey

2 cups picante sauce

2 (3 oz) pkgs cream cheese, cubed

1 cup sliced green onion

1 1/2 tsp ground cumin

1/2 tsp oregano

3 cups shreded Monterry Jack cheese

8 (8") flour tortillas

Combine the turkey, half of the picante sauce, cream cheese, onion, cumin and oregano in a skillet. Place over low heat until the cheese melts. Stir in 1 cup of shredded Monterry Jack cheese. Spoon mixture evenly onto the tortillas. Roll up and place with the seam side down in a greased baking dish. Spoon over the rest of the picante sauce and sprinkle on the rest of the cheese. Bake at 350 degrees for 15 minutes

HAPPY MONDAY!!

I feel so good this morning and I know it’s due to having a nice long weekend. During the work week I tend to not get enough sleep and then feel drug out, so maybe I can get to bed a little earlier from now on.

We are having a reprieve from winter for a few days and the snow is now history. I know it will be back, so I’ll just enjoy the few days we have.

The house looks like it's been turned upside down and I now have just 3 weeks to get it in order again. Our Christmas family get together will be the Saturday before the Christmas weekend. I guess it will happen whether I'm ready or not, but it would be a little more enjoyable, if I can get it all done.

Ok, who knows why they are called Land cameras? And, no, it's not because they don't work underwater. They are named after Edwin Land, the man who invented the process of instant photography.

 Edwin Herbert Land was an American inventor and industrialist born in Bridgeport, Conn. He became interested in POLARIZED LIGHT and invented a material to eliminate glare in 1932. This is now known by the trademark Polaroid. In 1937, he established the Polaroid Corp. to manufacture sunglasses, camera filters, and headlights. The first Sunday of Advent

I'll be putting my Advent Candles on the dining room table today getting some Christmas decorations out. I also need to start the Cards. I know some of my friends have put theirs in the mail already. There are always two cards that come the weekend after Thanksgiving. I can count on it.

Each year, for the beginning of Advent and in celebration of St. Nicholas Day I always send out little Advent calendars to all my family. This year due to circumstances beyond my control, they will not be going out, but I hope to add a little advent JOY into each of my newsletters !

THANKSGIVING FORECAST

Turkeys will thaw in the morning, then warm in the oven to an afternoon high near 190F. The kitchen will turn hot and humid, and if you bother the cook, be ready for a severe squall or cold shoulder.

 During the late afternoon and evening, the cold front of a knife will slice through the turkey, causing an accumulation of one to two inches on plates. Mashed potatoes will drift across one side while cranberry sauce creates slippery spots on the other. Please pass the gravy.

A weight watch and indigestion warning have been issued for the entire area, with increased stuffiness around the beltway.

During the evening, the turkey will diminish and taper off to leftovers, dropping to a low of 34F in the refrigerator.

 Looking ahead to Friday and Saturday, high pressure to eat sandwiches will be established. Flurries of leftovers can be expected both days with a 50 percent chance of scattered soup late in the day.

We expect a warming trend where soup develops.

By early next week, eating pressure will be low as the only wish left will be the bone.
