A while back I gave you all a link to what it looked like around here on Groundhogs day – the snow was just a couple days late, but it looks like that again here in northern Ohio. My boots will once again be getting a work out.

I would like to once again ask your prayers for DS#6 as he has a doctor’s appointment this week. He has some kind of lump on his head that they will be checking out. The good Lord always gives me plenty of reasons to pray and as I am dependent on Him for all my blessings, I pray a lot.

This week looks to be another quiet one here at home. But come the weekend, I’ll be going to the Home and Garden Show to have a ‘breath’ of Springtime! After our winter storm, I need it more than ever!

TODAY IS...GREAT PIE DAY

It's hard to pick a favorite, but what's more American than Apple Pie? Everyone's grandmother made the best apple pie in the world, but here's one that may not be in your family recipe box

SOUR CREAM AND APPLE PIE

7 or 8 cooking apples

Juice of 1/2 lemon

1 cup sour cream

2 eggs

1/4 to 1/2 cup sugar

Pinch of salt

1 teaspoon cinnamon

1 tablespoon vanilla

3 tablespoons flour

1 pie crust

TOPPING:

2 cups walnuts, chopped

1/2 cup flour

1 cup brown sugar

1 tablespoon cinnamon

1/4 pound butter

Peel, core and slice the apples. Keep the apples in a bowl of cold water with the lemon juice to keep them from turning brown. In a large mixing bowl, mix the sour cream with the eggs, sugar, salt, cinnamon, vanilla and flour. Toss the apples in this mixture, and put them in the pie shell. Preheat the oven to 350 degrees. TOPPING: Mix the walnuts with the flour, brown sugar and cinnamon. Mix in the butter using your fingertips. Spread this walnut mixture all over the top of the pie. Bake at 350 degrees for 1 hour or until the pie is set and the top is brown. If it is browning too fast, cover with a piece of foil. Allow the pie to cool on a wire rack before serving. Makes 6 to 8 servings.
