HAPPY WEDNESDAY !!

OVER THE HUMP DAY!

We had a pretty hot day here yesterday and today is supposed to be hotter yet. The thermometer in the shade said 93 degrees when I got home last evening. We’ll see what it says tonight.

Their isn’t much news to tell about. Things are pretty quiet here and that’s probably a good thing. The highlight of my day was sitting on the patio for a little bit in the evening watching our hummers play and listening to the chorus Mother Nature has provided. I know there were frogs, crickets and probably a cicada or two singing there hearts out for sure.

TODAY IS…RASPBERRY PIE DAY

 Raspberries were one of the first European plants brought to America. They belong to the rose family and are usually red or purple - although you can also find gold and black. These sweet berries have tiny edible seeds and an intense flavor and aroma. This makes them perfect for flavors and syrups, but their most common use is in preserves and pies. They like to grow in the northern temporate zones - and they like to be eaten everywhere.

RASPBERRY PIE CRISP

1 qt (4 cups) fresh raspberries

 1/3 cup sugar

1/4 cup margarine, softened

1/3 cup flour

1/3 cup brown sugar

3/4 cup rolled oats

1. Preheat oven to 350 degrees F (175 degrees C). 2. Wash the raspberries and put in the bottom of a 9 inch baking pan. If you don't have a deep dish pie pan, use a casserole dish. Sprinkle sugar over the top of the raspberries. 3. In a medium bowl, mix the margarine, flour, brown sugar and oats with the back of a fork until it looks like coarse meal. Sprinkle over the raspberries and sugar. 4. Bake 30 minutes or until lightly browned. Serve hot or cold. Top with vanilla ice cream if desired.

One night during a blackout a man fetched an old paraffin lamp from the attic. It was in a terrible state. It was black, cracked but still worked even though it shed little light. The wick smoked and gave off a foul smell. It was all too much for the man who said to his wife: “It's useless throw it out.” Three weeks later another blackout occurred. This time it was the woman who provided the light.

She produced a beautiful oil lamp and lit it. Its rosy glow lit up the whole room. “That's a lovely lamp” said the husband, “where did you get it?” “That's the lamp you wanted to throw out”, she replied. “Idon't believe it!” he exclaimed. “I saw the potential” she said. “I could see that underneath the layers of dirt there was a beautiful lamp.

There are many situations and indeed people that we push to one side. We fail to see underneath and the great potential that often lies within.
