HAPPY MONDAY !

I really hate to say it but it is…Monday! My next vacation day isn’t until the 4th of July weekend and I can’t wait til it comes ! I know that everything was done when I left work on Friday, so today it looks like clean out the files day. There is always a file at my desk known as the in/out basket. This basket accumulates things like memo’s and packing slips that need to be filed or pitched , so I guess that what I’ll do …my rolodex also needs to be updated. Some of the cards are very crumpled at the ends…so I’ll do that too !

It doesn’t sound very exciting does it??? Well there is always the phone to answer and maybe one of my bosses will be in and need me to do some things for them….you never know it might be a busy day??? We’ll see…

TODAY IS…BARBERSHOP QUARTET DAY

Four guys wearing straw hats, harmonizing "Sweet Adeline" or "Down by the Old Mill Stream." Well, it isn't an American invention. It all started in England during Shakespeare's time when the barbershops were also popular male hangouts. The guys sang along to a lute while waiting their turn for a hair-cut. This idea was picked up in the late 1800s in the American old West. They sang to a banjo instead of a lute, but the harmony was still sweet.

TODAY’S RECIPE

GINGER SHORTBREAD

2 cups flour

1 cup light brown sugar, firmly packed

1 tablespoon ground ginger

dash salt

8 ounces butter, softened (2 sticks)

Preheat oven to 325°. In a food processor, combine flour, brown sugar, ginger, and salt. Mix until blended well. Add butter and pulse just until the mixture resembles coarse meal. Pat shortbread dough evenly over the bottom of an ungreased 9-inch springform pan Press a fork on edges all around to make a decorative border. Prick the dough every 2 to 3 inches with the fork. Bake for about 1 hour, or until lightly browned and firm in the center. Remove pan sides and score into serving size wedges while still warm. Let cool to room temperature before serving. Store for up to 5 days in an airtight container, or freeze for several months. Makes about a dozen wedges.

(Tip:  Use your electric mixer instead of a food processor)

The Man Who Had Plenty

Once there was a family that was not rich and not poor. They lived in Ohio in a small country house. One night they all sat down for dinner, and there was a knock at the door. The father went to the door and opened it. There stood an old man in tattered clothes, with ripped pants and missing buttons. He was carrying a basket full of vegetables.

He asked the family if they wanted to buy some vegetables from him. They quickly did because they wanted him to leave.

Over time, the family and the old man became friends. The man brought vegetables to the family every week. They soon found out that he was almost blind and had cataracts on his eyes. But he was so friendly that they learned to look forward to his visits and started to enjoy his company.

One day as he was delivering the vegetables, he said, "I had the greatest blessing yesterday! I found a basket of clothes outside my house that someone had left for me." The family, knowing that he needed clothes, said, "How wonderful!"

The old blind man said, "The most wonderful part is that I found a family that really needed the clothes."
