The wind is really blowing around here because we have a weather front coming through and then temps will begin to drop. Today around 50 but by Wednesday around 40 and dropping… during the night… they keep mentioning that terrible “S” word.

Just a little over a month to go and winter will be here.  

A few more sips of coffee here and then I’m off to work!

TODAY IS...SPICEY QUACAMOLE DAY

Holey Moley! - It's The World's Best Guacamole Recipe!

Called ahuacatl by the Aztecs, avocados grew wild throughout Central America and Mexico as early as 900 AD. In fact, archeologists have found pottery with images of avocados from this time period. And they are SO good for you!

4 ripe avocadoes (must be ripe - peel and core)

2 limes (squeeze juice - fresh is best-not bottled)

6 green onions (the long skinny ones chopped thin)

2 small tomatos (diced)

1 garlic glove (smash it thoroughly)

Drop of Tequila

1/2 cup cilantro (chopped fine)

1/2 cup green salsa

1/2 teaspoon ground roasted cumin salt and fresh ground pepper to taste

1/2 teaspoon chili pepper

Dash of tabasco

TOPPING

1/2 cup sour cream

1/2 cup cheddar cheese, grated

1/2 cup pitted black olives, chopped

 Mash the avocadoes with a potato masher. Using a fork, whisk in the remaining ingredients. Place the guacamole in a medium serving dish. Cover the entire surface with a layer of sour cream, so that there is no green showing. Sprinkle the grated cheese on top. Sprinkle on the olives. Cover the bowl with plastic wrap and refrigerate it for at least 1 hour before serving. Serve with the Authentic Mexican Nachos
