OVER THE HUMP DAY!

 We’ve arrived at the middle of the week so that’s a good thing. Making it through Monday and Tuesday wasn’t so easy, maybe now it’ll be a downhill slide into the weekend.

 Last night DS#5 and his wife came by to show me pictures of their trip and also to bring a few souvenirs too. They gave me two spoons for my spoon collection, a beautiful lace cross from Venice, a Crucifix from Rome that had been blessed and a napkin from one of their dinners at a Pizzeria with a rooster on it. Knowing that I like roosters, they thought I’d appreciate it and I do.

The pictures were breath taking and I can only imagine what it would have been like to be there in person. So I feel like I just got back from Italy this morning. It was quite a trip. I think I looked at over 400 pictures in a 2 hour time span, so it was a whirl wind one for sure.

I’m sure DS#5 and his wife will be talking about it for a long long time. They are already saying they want to go back again sometime.

Today is pay the bills day at work, usually this takes up the better part of the morning for me, but would you believe it, we have no bills to pay tomorrow. I think this must be the first time ever in my work history that there were no bills due.

Another sign of how slow it is for me at work. I do have a few reports to do and that will take up a few hours, but after that I’ll be twiddling my thumbs again. Oh dear, don’t you wish you had an easy job like mine???

TODAY IS…DEVILED EGG DAY

 What's a picnic without deviled eggs? These little delights are always the first to disappear from any table. And we all know somebody who is famous for their deviled eggs. So, where did they get their name? It's because they are always made with mustard!

FAMOUS DEVILED EGGS

6 eggs

2 tablespoons mayonnaise, sour cream or plain yogurt

3/4 teaspoon yellow mustard

1/2 teaspoon lemon juice or pickle juice

1/4 teaspoon salt

1/8 teaspoon pepper

Paprika

Place eggs in a cold pan of water. Bring the water to a boil. Cover the pan with a tight fitting lid and turn off the heat. Let the eggs sit for 30 minutes to cook. Put the pan in the sink and run cold water over the eggs before peeling to keep the shells from sticking.

2. Cut the eggs in half lengthwise and take out the yolk with a small spoon. Place the egg yolks in a bowl and the whites on a plate.

3. Mash the yolks with fork. Stir in the remaining ingredients until well blended. Refill the whites, using about 1 tablespoon of yolk mixture for each egg half. Sprinkle with paprika and chill to blend the flavors.
