HAPPY THURSDAY!

This is the last day of my work week. I hope I get everything done at work so I can enjoy my long weekend. It’s getting very busy at work and I’m 2 pages behind right now.

Friday I’ll be doing a little house blessing and getting some Easter Baskets ready for the Babes, I hope to package up some things to get in the mail for my family out of state too!

After that I’m getting together with my Sisters and Dad for dinner.

Saturday is our family Easter celebration and I’m hoping the weather will be good for the Easter egg hunt for the little ones.

 Sunday is Palm Sunday already. Where did the time go to?

TODAY IS...FRESH TOMATO DAY

Tomatoes were grown by the Aztecs and Incas as early as 700 A.D. Seeds were taken back to Europe by explorers in the 1500's. They were called “Love Apples” in France, but were ignored in England as a food (they thought tomatoes were poisonous). Early colonists in the U.S. had the same idea. In 1812, Creoles in New Orleans started making tomato-based gumbos. By 1850, the tomato was being planted in home gardens all over America.

TOMATO CASSEROLE

 2-3 lbs fresh tomatoes (5 or 6)

1 lb polish sausage (or 8 hot dogs), sliced

1 onion, chopped

1 green pepper, chopped

1 cup grated cheese

1 cup flour 1/2 teaspoon salt

 1/4 teaspoon pepper

1/4 teaspoon garlic powder

1. Preheat over to 350 degrees F 2. Mix the flour, salt, pepper and garlic powder in a bowl. Cut the tomatoes into wedges or slices and dredge through the flour mixture. TIP: Just dredge the tomato in flour as you made the layers below. 3. In a casserole dish, make layers of tomato, sausage, onion, green pepper, and cheese. Repeat layers once more and top with a layer of tomatoes. 4. Bake at 350 degress for 30 minutes. Let stand 10 minutes before serving.

One day, shortly after the birth of their new baby, the mother had to go out to do some errands. So the proud papa stayed home to watch his wonderful new son. Soon after the mother left, the baby started to cry. The father did everything he could think of to do but the baby wouldn't stop crying.

Finally, the dad got so worried he decided to take the infant to the doctor. After the doctor listened to the father all that he had done to get the baby to stop crying, the doctor began to examine the baby's ears, chest and then down to the diaper area. When he undid the diaper, he finds that the diaper is indeed full. "Here's the problem", the Dr. says. "He needs a change."

The father is very perplexed, " But the diaper package says it is good for up to 14 lbs.
