HAPPY FINALLY FRIDAY !!

AND HAPPY SUMMER !!!

I’ve waited and waited for this day it seems forever. All through the long winter months of January February and March. Now it is finally here and I really am going to enjoy it. It’s so great to go off to work each morning in the daylight and to feel warm and not shivering from the cold. I really need to think seriously about what I can do to bottle up some of these lovely days so I can enjoy it in the winter too!

On the way to work yesterday I kept a good eye out for the flock of geese that like to sit in the middle of the road but didn’t see them. However, just a little way up the road is a pond and there they were – all having swimming lessons about 6:30 in the morning. That is a much safer place for them to be, but I know they won’t stay there.

I’ll be off for the weekend but will be back with my newsletter on Monday morning! Take good care and enjoy SUMMER.

TODAY IS…PLAIN YOGURT DAY

Yogurt is an old, old food that's been around for centuries, but it didn't become popular in the U.S. until the 1980s. People now eat it for breakfast, lunch, snacks - or even as a frozen dessert. All yogurt is an excellent source of calcium, riboflavin (B2) and protein. It can also be low in calories and fat - just read the label

CUCUMBER YOGURT SALAD

1 cup plain yogurt

2 large cucumbers

Fresh mint (to taste)

Optional Seasonings:

1 Tablespoon lemon juice

2 teaspoons chopped garlic

Salt and pepper

1. Peel cucumbers and cut in half lengthwise. Scoop out the seeds with a spoon. Slice thinly.

2. Stir up the yogurt and spoon it into a mixing bowl. Add some chopped mint plus any other seasonings desired. Mix well.

3. Stir in the sliced cucumbers last. Cover the bowl with saran wrap or foil. Chill for at least an hour before serving.

Today is Audie Murphy Day, marking his birth in 1924. Audie Leon Murphy, son of poor Texas sharecroppers, rose to national fame as America's most decorated hero of World War II. Among his 33 awards and decorations was the Medal of Honor. He also starred in 49 films, including the autobiographical "To Hell and Back" in 1955. The Audie Murphy Museum is in Greenville, Texas, down the road from his boyhood home near Farmersville.

A wealthy old lady decides to go on a photo safari in Africa, taking her faithful aged poodle named Cuddles, along for the company. One day the poodle starts chasing butterflies and before long, Cuddles discovers that she's lost.

Wandering about, she notices a leopard heading rapidly in her direction with the intention of having lunch. The old poodle thinks, "Oh, oh! I'm in deep doo-doo now!" Noticing some bones on the ground close by, she immediately settles down to chew on the bones with her back to the approaching cat.

Just as the leopard is about to leap, the old poodle exclaims loudly, "Boy, that was one delicious leopard! I wonder if there are any more around here?" Hearing this, the young leopard halts his attack in mid-strike, a look of terror comes over him, and he slinks away into the trees. "Whew!" says the leopard, "That was close! That old poodle nearly had me!"

 Meanwhile, a monkey who had been watching the whole scene from a nearby tree, figures he can put this knowledge to good use and trade it for protection from the leopard. So off he goes, but the old poodle sees him heading after the leopard with great speed, and figures that something must be up.

The monkey soon catches up with the leopard, spills the beans, and strikes a deal for himself with the leopard. The young leopard is furious at being made a fool of and says, "Here, monkey, hop on my back and see what's going to happen to that conniving canine!"

Now, the old poodle sees the leopard coming with the monkey on his back and thinks, "What am I going to do now?", but instead of running, the old dog sits down with her back to her attackers, pretending she hasn't seen them yet, and just when they get close enough to hear, the old poodle says: "Where's that dang monkey? I sent him off an hour ago to bring me another leopard!
