I’m enjoying having a slow start to the day – it ‘s the last day I’ll be waking up with company in my house for awhile…they are staying at the hotel where the wedding reception is tonight as their flight leaves early tomorrow and the airport is nearby the hotel. I’ll be going in to help take care of the babes and them coming back home after the reception tonite. The wedding is at 2 and the reception at 6, so it’ll be a long day !

I got an e-mail from DDIL#2 and after many trials, and a hurricane Son #2 got his military advancement and I put a picture of him up on my journal page.  Congrats!!! We are all very proud of this accomplishment! He looks very handsome in his new uniform.  They are doing well and are beginning to get back to semi-normal but their babes can't come yet.  They couldn't even go out to celebrate because no restuarants are open.    I'm praying for all those still trying to recover from the terrible devastation along the Gulf Coast.

What can I say about This Date?
You can spend hours sweating
over a hot stove doing this...  

 HOME MADE BUTTERSCOTCH  PUDDING  

3 cups milk
4 large egg yolks
3/4 cup dark brown sugar
1/4 cup cornstarch
2 Tbsp. unsalted butter, cold, cut into small pieces
2 tsp. vanilla
3 Tbsp. molasses
1. Bring 2-1/2 cups milk to a boil in a medium saucepan. Mix together the remaining 1/2 cup milk, egg yolks, brown sugar, molasses, and cornstarch in a mixing bowl until smooth.

2. Temper the hot milk into the mixing bowl by slowly adding and while mixing. Return the entire mixture to the saucepan.

3. Bring to a boil, whisking constantly until thickened. Remove from the heat and whisk in butter and vanilla extract.

4. Strain into a clean bowl or four individual pudding cups. Place a piece of plastic wrap or waxed paper directly on the pudding surface. Let cool at room temperature and refrigerate for at least three hours before serving
