December is here ! I’ve already received 2 Christmas cards in the mail, so I guess I’d better get busy. I have purchased my cards, just need to write them out and also need to put together my Christmas Newsletter that I send out with it. Some of the people I send cards out to, don’t receive this newsletter, otherwise I wouldn’t need to do one…you all already know all of my news.

The snow is supposed to arrive today along with much colder weather. The temps dropped dramatically yesterday and we had lots of rain. By tonight we’ll be down in the 20’s.

TODAY IS…APPLE KRINKLE DAY

 We have an Apple Krinkle day is because it's my favorite winter dessert. Eat this hot out of the oven or cold out of the fridge. Eat it plain or pile on the ice cream. There is nothing you can do to this that makes it anything except yummy good!

4 cups apples

1 cup sugar

2 tablespoons flour

Topping

1/2 cup butter or margarine

1/2 cup flour

1/3 cup brown sugar

1/2 cup oatmeal

1. Preheat oven to 350 degrees 2. Peal and slice the apples into a baking dish. Sprinkle 1 cup of sugar and 2 tablespoons of flour over the top of the apples. 3. Put the butter, flour, brown sugar and oatmeal for the topping in a mixing bowl. Blend well with the back of a fork. Spread evenly over the top of the apples. Bake 45 minutes to 1 hour - until the apples are bubbly and the top is brown.

THE FIRST American Christmas tree can be credited to a Hessian soldier by the name of Henrick Roddmore, who was captured at the Battle of Bennington in 1776. He then went to work on the farm of Samuel Denslow in Windsor Locks, Connecticut, where for the next 14 years he put up and decorated Christmas trees in the Denslow family home.

The first Christmas tree retail lot was established in 1851 by a Pennsylvanian named Mark Carr, who hauled tow ox sleds loaded with Christmas trees from the Catskill Mountains to the sidewalks of New York City.

HAPPY THURSDAY!

Today the rain and cooler weather is moving into our area. Tomorrow we’ll be seeing snow for sure they say! I for one have certainly been thankful for the few days of nice weather we had.

Tomorrow we start a new month – one of busiest month’s of the whole year! My list is so long that I’m thinking of asking Santa if he could send one of his elves my way to help out a little . Every year I say I’m going to get ahead of the game and enjoy the holidays, and every year, I’m rushing to the finish line.

I talked with DS#2 last night and all is well at their house (thank God for answered prayers) but very busy. He is still planning on being home for Christmas ! I’m so happy as it’s been way too long since their last visit.

TODAY IS…SACHER TORTE DAY

Austrians take their baking seriously - and the definition of a true Sacher Torte had to be decided in court. In the early 1800's, the Congress of Vienna ruled that a Sacher Torte was made of two chocolate cake layers separated by apricot jam with a chocolate glaze on the top and sides. The most famous Sacher Tort is made (of course)at the Sacher Hotel in Vienna, but you can makes your's at home.

4 egg whites

6 tbsp margarine or butter

3 squares (3oz) semisweet chocolate

4 slightly beaten egg yolks

1 tsp vanilla

1/3 cup sugar

1/2 cup all-purpose flour

1/3 cup apricot preserves

Chocolate Glaze

2 squares (2 oz) semisweet chocolate

2 tbsp butter

3/4 cup powdered sugar

4 tsp hot water

In a large mixing bowl, bring egg whites to room temperature. Grease and flour a 9" round baking pan and preheat oven to 350 degrees F. Melt the butter and chocolate over low heat in a medium saucepan. Cool, then stir in egg yolks and vanilla. Set this pan of chocolate mixture aside. Beat the egg whites with an electric mixer untill soft peaks form. Gradually add sugar beating on high speed for about 4 minutes or untill it forms stiff peaks. Gently fold about 1 cup of egg whites into the saucepan of chocolate mixture. Then fold the chocolate mixture into the rest of the egg whites. Gently fold in the flour. Don't overfold. Spread the batter into the round baking pan. Bake for about 35 minutes or untill a toothpick inserted near center comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove cake from pan and cool completely.

TIP: When I make this, I divide the batter between two round cake pans and decrease the baking time so I don't have to cut one layer in half.

These directions are for the original method.

Cut cake horizontally into two even layers. Put one layer on a sheet of waxed paper. Spread the preserves over the top. Add the second cake layer. Spoon Sacher Torte Chocolate Glaze over cake so it runs down the sides. Carefully transfer cake to a serving plate.

Sacher Torte Chocolate Glaze:

Melt 2 squares chocolate in a saucepan with 2 tbsp butter. Remove from heat. Stir in 3/4 cup powdered sugar and 4 tsp hot water till smooth. If needed, stir in more hot water so it is easy to drizzle.

TIP 2: True chocoholics might want to double this glaze recipe for full coverage of the cake.

This week is rolling right along – Over the Hump Day already! I’m not getting much done so far and feel like I’m still catching up on things. I did change into my December Purse a few days early, I’ll put a picture of it on the journal page come December 1st. It’s the largest one of the 12 purses of 2006. I figured it needed to be spectacular in some respect. I can’t believe how fast this year has gone by.

It's not just Thanksgiving - Think of it as... TURKEY LEFTOVER SEASON

Cooks struggling with the question of what to do with all of that turkey, deserve their own special day!

TURKEY ENCHILADAS

3 cups chopped turkey

2 cups picante sauce

2 (3 oz) pkgs cream cheese, cubed

1 cup sliced green onion

1 1/2 tsp ground cumin

1/2 tsp oregano

3 cups shreded Monterry Jack cheese

8 (8") flour tortillas

Combine the turkey, half of the picante sauce, cream cheese, onion, cumin and oregano in a skillet. Place over low heat until the cheese melts. Stir in 1 cup of shredded Monterry Jack cheese. Spoon mixture evenly onto the tortillas. Roll up and place with the seam side down in a greased baking dish. Spoon over the rest of the picante sauce and sprinkle on the rest of the cheese. Bake at 350 degrees for 15 minutes.

This week is rolling right along – Over the Hump Day already! I’m not getting much done so far and feel like I’m still catching up on things. I did change into my December Purse a few days early, I’ll put a picture of it on the journal page come December 1st. It’s the largest one of the 12 purses of 2006. I figured it needed to be spectacular in some respect. I can’t believe how fast this year has gone by.

3 cups chopped turkey

I heard from the ‘Sunshine Babes’ and they are home safe and sound once more and DS#4 had a really good surprise at work Monday – they gave him a very nice raise in pay. That was a very welcome surprise! Thank the good Lord for his many blessings !

Tonite is our monthly Dulcimer get together and other than that the week ahead looks pretty quiet. I plan to wrap a little each evening and also paint a little. If it wasn’t for the holidays and special celebrations, I’d get very lazy, so it’s a good thing that I have something to keep me busy.

The baby is teething-the children are fighting. My husband just called and said to eat dinner without him. Okay, one of these days you'll shout: "Why don't you grow up and act your age!" and they will, or "You guys get outside and find yourselves something to do...and don't slam the door!"...and they won't.

You'll straighten up their rooms neat and tidy...bumper stickers discarded...spreads tucked and smooth ... toys displayed on the shelves...hangars in the closet...animals caged, and you'll say outloud: "Now I want it to stay that way!" and it will...

You'll prepare a perfect dinner with a salad that hasn't been picked to death and a cake with no finger traces in it and you'll say, "Now there's a meal for a company." and you'll eat it alone. You'll say, "I want complete privacy on the phone. No dancing around, no pantomimes, no demolition crews. Silence! Do you hear?"...and you'll have it.

No more plastic tablecloths stained with spaghetti, no more anxious nights under a vaporizer tent, no more dandelion bouquets, no more iron-on patches, knotted shoestrings, or tight moots. Imagine, a lipstick with a point, no babysitter for New Year's Eve, washing clothes only once a week, no P.T.A. meetings, carpools, blaring radios, Christmas presents out of toothpicks and paste. No more "Wet Oatmeal Kisses". No more toothfairy giggles in the dark, or knees to heal.

Only a voice crying..."Why don't you grow up?"... and the silence echoing ......."I did."
